01 Volkswagen Passat Coolant level issues

Help! My car is not overheating, but my "STOP Check Coolant Level" light comes on all the time. Sometimes 2 times a day.

I pull over and notice the coolant level is low so I slowly open the cap and it makes a popping sound and the coolant level bubbles up to the normal level. If I drive for a while and am not able to pull over right away when the light comes on, it does the same thing it, but overflows this time. Then usually the same day or the next time I start the car the light comes on and the coolant is very low. It does not bubble up at all so I then fill it and it won't happen again for maybe another week or so.

I've already had the temp gauge checked and I have not noticed any leaking ever.

    I recently bought an 04 Passat with 210K. Car runs fine and the temp gage appears to work properly. Over the pass few days I'm getting an intermittent "Stop Check Coolant" warning message. Temp gauge is reading a consistent 190 & Coolant level appears in the acceptable range. Before I start swapping out coolant system items (thermostat, temp sensor... ect) any suggestions for other owners?

    PROBLEM SOLVED
    I fixed my issue.
    Diagnostic read "STOP">"Check Coolant"> "See Owners Manual"
    Temp gauge read 190F
    Check the temp in the Reservoir with thermometer it was 192F
    Coolant level was normal and flowing well.

    PROBLEM:
    Connector to sensor on the bottom of the Reservoir had loosened or wasn't put back on properly from a repair (or some such thing).
    Slid it off (still looked connected)
    Cleaned it and the fittings.
    slid it back on till I heard a solid CLICK.
    1 week later and PROBLEM STILL SOLVED!!!

    It is a tricky clip and may not appear to be on properly.
