High oil temperature

Let me start by saying I'm not a motorhead and don't have any mechanical skills. I'm looking for help with my 98 GMC Sierra 1500 (305, manual transmission) it has about 203,000 miles. My oil temperature gauge will run way up and border the 260 mark. If I lay off the accelerator the temperature will drop back down into normal-er ranges but as I speed up, up goes the temp sending the "Check Gauges" message to the dash.
I thought it might be related to needing an oil change - as I was also experiencing fluctuating oil pressure. I got it changed this morning and the oil pressure is now staying steady. However, there has been no change in the oil temp. It still rises to irregular highs.
I've checked my coolant and it was low and I added some but having drove about 20 miles since doing so, I still see no changes to the temps.
