Probably not a good idea. The engine will run over cool and the coolant temp sensor will think the engine is not up to operating temperature. You'll use more fuel.
Assuming your engine is overheating, and any number of things could be causing that. Removing the thermostat will only mask those. Could be a blown head gasket, cracked cylinder head, thermostat stuck in the shut position, clogged radiator, bad cooling fan.
