First, air is 78% nitrogen, so even going to 100% is not that great..
Second, while the oxygen molecule is smaller, it is only marginally so. It's enough to affect the diffusion rates through rubber, but there are other gases that have more differences in both diffusion and density.
Nitrogen and Oxygen are next to each other in the periodic table, so the differencesw between these 2 elements is small compared to, say, Argon which is a lttle further down.
I suspect something else caused the change in noise level. Even a small difference in balance could affect the noise bouncing around inside the air chamber of a tire and wheel assembly. Something as small as reorienting the tire and wheel assembly on the same hub is going to slightly change the balance of the overall rotating parts.
A lot of cars have this problem. Just be more careful or move somewhere that has excellent road maintenance.
