Really? Your big complaint is that the school didn't do enough parking lot and cone drills?
I have attended the FastLane school and it was outstanding for a complete novice like myself who had never been on a track or driven anything even close to a race car. The thrill of being out on a real racetrack under relatively controlled conditions with an instructor in the passenger seat talking you though 10 laps is PRICELESS! And more fun than should be legal.
I say skip the classroom and parking lot cones and just get out on the track in a good learning car with an instructor in the passenger seat and learn by DOING. That is the only way that you'll ever really learn.
