Your long-term vehicle is almost exactly what I ordered for my 2015 mustang GT. I didn't order the racing seats, and didn't opt for the 50 year appearance package, but did go for almost all the bells and whistles tech wise.

For the most part we agree on all the details and issues you've been posting about:

I find the brakes are particularly and overly strong, the regular bucket seats fantastic, the MyFord Touch somewhat cumbersome to use, the shifter is great but there is a problem in alignment shifting from first to second (and there are aftermarket parts to stabilize this), babying the car I've got an average of 17.1 MPG mixed driving, the V8 growl is quite subdued and I am thinking of a Ford Racing Touring exhaust.

Since I live in the northeast and am a "year" round driver, I am hoping for aftermarket splashguards/mud flaps, and rocker panel protection.

Cheers and keep those updates coming!!!
