A rearview camera is a nice option to have, but what happens when a little fog renders the camera on our long-term 2015 Ford Mustang useless?

This is how these cameras tend to be. In rain, mist, snow, etc. they are rendered useless. The cameras on our Toyota Highlander and Chevrolet Equinox both exhibit behavior similar to the Mustang.

If it has reverse sensing, it shouldn't be a big deal.

Cameras are an AID to reversing and should not be the only tool in the box for backing out. He also said he just moved the car indoors after sitting outside (in foggy conditions) all night. As a professional photographer, I see this all the time. Even though the indoor parking may only be a few degrees warmer, that's all it takes for condensation to form. The glass/plastic lens is cold and damp, it gets moved inside to a (slightly) warmer environment and within seconds, a fog of moisture forms over the lens. I also bet it cleared up in a minute or two.

@brauch - We also had low decks, and windows we could actually see out of.

The lens should be sealed though. Moisture can invade during, say, a car wash, and possibly render it inoperable. Mazda had this issue a couple of years ago and issued replacements.
