Cars today are not tall people friendly.

I have seen a few post from a few people with needs of knee friendly cars. I am not as tall as some of the people who have posted, only 6'5", but with present day cars I am having comfort issues. The cockpit design of new cars today look nice but they are very unfriendly for people who are tall. My probably is my knee hits the cockpit usually right on the knee cap. This is not a comfortable long distance drive. I need a new car, would love a bench seat, but know that will probably never be an option? Don't want a truck, cost too much to drive. I have a 2004 Toyota Camry and a Jeep Wrangler 2004 that have center consoles but they are low and flat where front console and do not extend out which fit me.
I have two questions:
1. Are there any recent new cars out there that have this in mind?
2. Are any car manufactures discussing this and possibly give options for modified center consoles?

Interestingly, I found the space in all positions on the Ford Flex to be very comfortable and spacious, yet still felt snug in a way, when I've been in them. As of now, I'm even planning to buy one in the next year or two as the '15s (last year for the model) are coming back off lease, etc.
