When a failure occurs such as your Subaru's head gasket, it can cause other issues to worsen that would have otherwise taken longer to generate a failure. Things like O2 sensors, air fuel sensors and catalytic convertors can be damaged by engine coolant that can get into the exhaust system. The catalytic convertors can also be damaged by misfires that often occur with mechanical failures.

There is also the problem where a failure results in the computer blocking tests from running that should detect other problems. When tests are blocked, the trouble codes that they could generate don't get created to give the repairer any indication that something additional is wrong. Then as maybe in this case after the head gaskets are replaced, now the computer can run all (or at least more) of its tests to completion and it now detects issues and turns the light on, which really means it is doing exactly what it is supposed to do.

Of course there is always the chance that some type of an error occurred during the repair and now the computer has detected and generated a code for it. This could be the result of a technicians mistake or simply a component that while it appeared to tolerate servicing has in fact failed as a result of it. It happens. All you can do at this point is get the car back in and have them investigate the situation. It might be a simple fix. Post the code(s) that are retrieved and then we can have a better idea of what is going on.
