Chevy Impala 2010 Engine Hot Turn Off A/C Warning

I got this "Engine Hot Turn A/C OFF" 5 minutes into a drive, its happened before and the repair shop said the coolant level was fine. The Temp gauge was still on Cold and I got the same warning 1 week later after I left the car untouched, outside in cold weather.
What could be the cause? A bad sensor? Thermostat? Coolant fluid needs to be replaced?
