  Erin, I don't know what flexibility you have in your schedule, but there is a decent driving road in the foothills of the La Sal mountains east of town. It's a narrow two-lane with lots of elevation change, some tighter turns, marvelous scenery and some rotten pavement for opining on ride/handling balance. It climbs from the south end of the Moab valley up along Pack Creek, meanders north & east along the mountains, then drops into Castle Valley and the river.
