You mean replacing the original covering exactly? That is possible but would be quite expensive as there's a lot of labor involved. It might run $2000 by the time you're done. You might consider a high quality dash cover. Some of them look quite nice--not like the cheapos you see sometimes.
Other than that, you could drop in at an upholstery shop and get some advice, or search wrecking yards at www.car-part.com. I'm not sure whether you can order an entirely new dash from Toyota--probably--but it's gonna hurt.
