when to buy last year's car?

I'm looking to buy a subaru crosstrek in the coming 6 months. The color I want is only available in the 2019 & 2020 models, and I'm also looking for the Limited trim as well as moonroof/HK sound package.
It looks like there is no real strategy on getting a good deal for this vehicle, as it seems pretty popular, but is there any benefit to waiting a few months into the year?
I'm also open to buying this car used, but so far the list prices for lightly used 1-2yo crosstreks are basically the same as new.
Would I likely have better luck negotiating used car prices over new car prices if we're talking about basically the same car? and very light use? (not a fleet vehicle, no accidents, under 15k mi say)
Feels like I just have expensive taste! But if anyone has tips on how to best approach this purchase it would be greatly appreciated.
