What could break if you have low oil pressure? Something in my engine blew right after the light came on. It was a really loud noise. Caused a lot of smoke and fluid was everywhere.

Any and every part of your engine could fail, without lubrication

Most typically, the engine would seize, or a connecting rod would break, or you could spin a bearing on the crankshaft, causing a rod knock. If you were "lucky" maybe something in the upper engine would let go first.
