Yup, the '65s were distinguished by the vents in the rear quarters. '66 GT-350s had triangular windows there. I don't think the early ('65-'69) Shelby Mustangs were ever called Cobras. Some later Ford Mustangs carried that name in the 80s.

The Registration number is one from the period when we were running out of numbers in the years leading up to the introduction of a year suffix letter (the first of which - A - was introduced in some areas in 1963) as the existing system, having introduced reversed numbers from the early fifties.
Most districts followed say, YBC 123 with 123 ABC but the busiest councils had to go right back to their earliest two letter codes to make it through to the early sixties.
Manchester had issued NB 1 to NB 9999 in twelve months from 1919 to 1920 but when they were issuing the revised numbers they went through them again hence 3330 NB coming along.
They even issued their earliest Manchester code - N, last seen in about 1915 - again, i.e. 1234 N in 1960
I never really understood why they put so much effort into tying the plates into a year. Or even a region. Especially the year. Who really cares when it was issued?

Your information is mostly correct but while it's true that the COBRA lettering appears on the valve covers of the GT-350 emblem but no "Cobra" emblem or lettering appears anywhere on the exterior and it's only on the steering wheel hub on the inside.
Here's a sales brochure from 1966 with no mention of Cobras except for the roadsters and the "Cobraized" V8
I don’t remember the license plate numbers but do remember dad’s 72 Cortina GXL 2.0 ended in K and his 74 Cortina E 2.0 ended with M. They were his company cars.

Of course I'll go for the Sportscar first. At first I thought that red roadster is the rare Kurtis Sports Car (ca.1949-50) or it's successor the Muntz Jet but those had horizontal bars in the grille. Then I figured maybe it's a Nash-Healey but again the grille doesn't match. How many split windshield post war sportsters were there? Not many but I'm stumped on this one. Help!

The British registration was initially organised - in 1903 - to be administered by local counties as there was little national government other than via the Post Office.
People did have things like Births Marriages and deaths, as well as things like factory boilers etc inspected at local council level, and as they were issuing those sort of licences then they could issue the local population with Car registrations.
Later we had a national road worthyness test and it applied first for cars over ten years old -from 1958 - and steadily went to a three year old car needing an annual test from 1964 _ the year letter helped the police to workout if it needed a test.
It doesn't matter with your plates as you date them anyway.
