From your math, without the trade-in, the lease for the SL would be $500 down/$390mo & the Platinum would be $1500 down/$439mo.

The prices are okay. I'd want to shop hard to see if I could do better.
Residuals have dropped by 2%, so the numbers will change, when/if you go back.
Check some other recent posts to see what others are getting. You probably won't be able to match the best price, but you should be able to come close
I am looking at a few other posted deals on here. A previous post on a SL was at $403/mo with $0 down. The consensus for his deal was that he was getting a good deal. If you add my $60/mo trade in, the SL price would be at $463/mo for his deal.

Seems like they dont really want to sell me a car when I compare that to what I have been seeing here.

Lease cash is most likely $4925. Just call and ask any local dealership.
Start negotiating by emailing or calling the General Sales Managers at the dealerships. Tell them the types of prices your (virtual) acquaintances are getting, and ask them to compete. Keep notes and pit them against each other. You can't begin to fathom the type of pressure they are under to move metal. They need to sell that car more desperately than you need to buy it. Sales are down, and it's a buyers market.

In my east coast metropolitan region, there are probably well over a dozen nissan dealerships. located within a 50 mile radius of me, and competition for business is fierce.
In your area, since so few dealers are competing for all that business, they have little incentive to be aggressive on price. That may also explain why the Nissan incentives in your area (they're based on zip code) seem to be anemic as well.
You may have to broaden your search to the next closest major metropolitan area. I feel your pain.

They are offering the "SV" trim for $219/mo + $0 down (includes 1st month payment but does not include tax/title/tag/dealer fee/bank fee). I decided to email a picture of that ad to the local nissan dealers around me to see what #'s I can get through email vs going in person.
One of them got back to me saying they can do $319/mo + $0 down (INCLUDES all tax / tag / fees, etc.) & 12K/36mo
This seems like a great deal as $319 x 36= $11,484 total on a car with a MSRP of $36K.
Thoughts on this / anything to be weary about? The dealership is over an hour drive so I dont want to get there and then they change all the #s!
Ask the salesperson to email you a screenshot of his computer with the deal on it. (he might have to get this from the F&I person). Once you have it, tell him you'll come get it, but it has to be exactly that.
Have you asked if they have the car in stock, in a color you want?

There is an acquisition fee, and NY collects tax on the sum of the payments. We suggest you limit your out of pocket to just the first payment and DMV costs.
I suspect, but do not have confirmation, that there is lease cash available.
Ask the dealer for the adjusted cap cost - selling price plus all taxes and fees. Have them break everything out for you.

went into the Nissan dealership today and test drove the nissan Maxima.
They got me in with this ad "$229/mo + $1,823 at signing" + tax/tag/title/fees

If we add all of that up we get: ~$12,267.
Comparing that to what they offered me ($1895 down + $338/mo) that comes out to ~$14K!
So there is roughly a $2,000 difference on what they are offering me and the ad they have online.
Any insights to making this deal would be greatly appreciated!
